I don't think there is a better resource out there for learning about brewing maggeoli, unless you can read Korean. If you're at all interested in maggeoli, I'd say this is a must buy.Posted on WonjubrewVerified A fanastic and comprehensive resource I've had to pleasure of following Baekusaeng/Joe and his brewing chronicles on Instagram for a little bit before his book came out and I was thrilled when he announced the publication of this resource. Videos and photos from his experimentation and prolific brewing makes you want to learn all you can from him.The book is a fantastic resource. I appreciated that it was not just a tutorial book, but really sought to breakdown the science of makgeolli fermentation in a digestible way so you can better understand what is going on with your brew. The chapters build on each other nicely, laying the foundations for the next sections and your brewing education. I think a lot of makgeolli homebrewers stumble into brewing through youtube and the well-known Makgeolli primer by Becca Baldwin, but there are a lot of second order questions along the way that are hard to get answers to with English language resources and I feel like this book did a great job of filling that gap and anticipating the most common questions and providing helpful suggestions -- especially describing in great multi-sensory detail what your brew will look at different stages. I also liked that it expanded on multi-stage brewing and how to start your own nuruk -- processes that there are limited English language resources for.
